Beef and Pineapple Kebabs with Cashew Rice
Ingredients
- 1 1/4 c. rice
- 2 tbsp. soy sauce
- 2 tbsp. maple syrup
- 2 tbsp. rice vinegar
- 1/2 small pineapple, cut into chunks
- 1 1/4 lb. sirloin steak, cut into 1 1/2-inch chunks
- 4 red chiles, each cut into 6 pieces
- 1/3 c. roasted salted cashews, roughly chopped
- 1/4 c. cilantro, chopped
- 2 tbsp. lime juice
Directions
- Cook rice. Heat grill on medium-high. In bowl, combine soy sauce, maple syrup, and rice vinegar.
- Thread pineapple chunks onto skewers. Thread sirloin steak chunks and red chiles onto other skewers; brush with oil and season with 1/4 teaspoon each salt and pepper.
- Grill kebabs, turning occasionally, 4 minutes. Brush with sauce and grill until pineapple is lightly charred, 2 minutes, and steak reaches desired doneness, 3 to 4 minutes for medium- rare. Transfer to plates.
- Fluff rice. Fold in cashews, cilantro, and lime juice. Serve with kebabs.
